Oxalates are ubiquitous in plants and plant products; oxalate content can vary considerably due to differences in plant species, climate, soil quality, state of ripeness, which part of the plant is analyzed, and different measurement methods used.  Currently, there is no reference standard for oxalate count or definition of oxalate levels (low, medium, high) that we are aware of.
